It appears to me that many flags and coats of arms in Eastern Spain and southern France have this pattern. I thought it was a Catalan pattern, but I've also seen it in use in non-Catalan areas (ao Aragon in Spain and the Ariege departement in France). I assume it has its origin in a Medieval kingdom or county but I'm not sure. Does anybody know more about this?

I'm really not very sure but may be the spreading of this pattern on these territories has something to do with their Occitanian roots. These territories, though having never been united oficially, formed a steady cultural unity sharing common language, architecture, cuisine etc. etc.

Modern flag of Midi-Pirenees (part of the former Occitania, though a little bit diminished in size) is based on the Counts of Toulouse’ flag and looks like a yellow four-pointed cross on the red field.

The former Occitanian flag looked just the same + yellow seven-pointed star in the right high corner.

BTW Ariege, which you mention is now one of the Midi-Pirenees’ departments.

This flag is the Aragonese King's flag, but many terriories of him took as its own flag sometimes with some differences. The first King that used this flag was Alfonso II. Also Catalonia, Valencia, Mallorca and Sicily have this flag and also other regions like Castellon or Tarragona but with some details.
 
Valencian flag has a vertical blue strip.
This strip is green in Castellon flag.
The strips in the flag of Tarragona are wavy.
Sicily has two details in white and black
Mallorca has a Castle.
 
The used by occitanian terrotories can be because Aragonse King has an important heritage in the South of France. (not only Rousillon or Montpellier).
 
My City (Vila-real) was a royal city and was founded by James I. By that we have his flag as a local flag. 
I'm sorry but my English is not very good. I'm from Vila-real (Valencia, Spain)
