when did it start and when did it end? oh, and also, when was the empire at it's greatest height.

Started in 1206 and reached its greatest territorial height during the reign of Kublai Khan. At that time it had been split into various Khanates though.

The Mongol Empire was indeed founded in 1206 by Ghenghis Khan, and existed as one complete Empire until the death of Kublai Khan in 1294.
