I remembered the Greek myth of the Cyclops and Giants from the Greek Theogony. According to mythology they were huge man-like creatures with extraordinary power and one-eyed (remember Polyphemus in Odyssey?).
Fossils of small mammoth-like creatures or small Elephants were found also in Greece (Crete) and Greeks also saw Mammoth skeletons in Scythia. From the picture below it's easy to confuse the trunk-socket for an eye and the ribs and legs of the elephant as human ones. Of course this is not proof but can give a plausible explanation to the Greek myth of Cyclops.
