Could someone provide me with a list of:

1.  Latin/Greek sources (English translation) of Rome from 511 B.C.E. to the beginning of the First Punic War.

2.  Good second hand (contemporary of today) works on that era... especially Samnite history, and the take over of Italy by the Romans.

There is Salmon's work on the Samnites.  However, I am actually trying to get this one myself.  And I must say, I'm having a doozy of a time trying to get this out-of-print wonder.  Maybe you'll have more luck...

Well, I beleive Kathryn Lomas has some books pertinent to the Samnites if you care to search.  Additionally, John Michel David's The Roman Conquest of Italy would likely contain some relevant info.

Also, you may be able to pick up that Salmon book at a university library.
