When was this regional name "Khorassan" first used?  Was it after the Islamic Invasion, or was it during Sassanian times?

Khorasan was a satrapy created by the Sassanids.

The regional province known as Khorassan today by the Islamic Republic of Iran is only half of what Khorassan really was correct?  Didn't it include most of what is today Turkestan and northwestern Afghanistan?

Yes and it also included parts of Uzbekistan, what is left is less than half.

Wikipedia has a a decent piece on it. I think it is reasonable to say that the area is the cradle of all Iranian people.

Khorasan just means "East/Dawn", so eastern part of Iran has been usually known as "Khorasan".

The Sassanians first used the term Khorasan. They divided IranShahr into four parts:Khorasan (meaning sunrise and east), Khovaran(meaning sunset, west), Bakhtaran (meaning north), and Nemroz (meaning south).

I really wonder about it and  I will ask, in our Persian dialect , xur is sun and there is a verb osidan , to appear then xuroson( that is my coin) means the place where sun is set, is it related to Khorasan?
