Did they display the Roman legionaries accurately? Were they wearing the proper chain armor?

no, its displayed inaccurately, they were using imperial age armour and shields rather than those during the late republican era.

I'm no expert but even I thought they didn't look like the right armor.  Now, the whole game is supposed to take place before the Empire, but I'm assuming that those legionaries are the standard unit in the game, so they use a unit as standard when it doesn't even belong in the game.

A well-made chain armor piece can look very similar(in the way that it is equipped) to the segmented armor of the Early Principate, so it is possible that users didn't get a good enough look to see the details of the soldiers(I missed out on this episode).

In any case, Roman armor didn't save them in the later centuries against Sassanian archery or their Savari (calvary units).

They're accurate.  It is really quite hard to say which style they were, could be Montefortino or Coolus(though the latter had not been in mass use for around 30 years before Caesars' wars).

But yes, the Imperial-Italic helmets used later on in the First century BC were very similar in appearance to earlier helmets, as they were based on those Greco-Etruscan models.
