"Orientation" in this context means facing the East (the Orient). Churches are traditionally built longitudinally East to West, with the high altar at the East end. The congregation sit facing the altar, so when the priest turns his back to the congregation he too is facing the altar, and hence facing towards the East.
In the Latin Mass the priest is turned away from the people. He has his back to them.
The word used by the Church to explain why the priest is facing that way is "Orientation".
