I've recently became obsessed with fencing.
What I noticed though is that nowhere does it really give any information on the creation on fencing.

Well first off welcome to the forum and secondly I've been obsessed with worse.
It basically has to do with the developement of the defense of persons and property.....and the boundary markings of property. ala what is a wall around a building or structure for (think castles) but here's a pretty good little blog comment on it that's quite readable and makes sense. And as noted fencing is a homonym word..so it's funny as well. Enjoy it. The other links are informative as well.

You might try someplace like the "Sword Forum" a very serious group of folks there.
Not all forums are very active. Try the subforums listed in the first grouping on the homepage. Those are the most active.
The fencing forums appear to be dead, but that doesn't mean there aren't folks who would know.

Oops I just realized I proved the point of homonyms.....fencing as to what type of fenc  ing...
duh...some days I'm slow. Swords forum was active a long time.... shame about that...as for sword fencing here's some decent links.

I would rather think that the key word would be "fence" as in "defence/defense", etc.!
In fencing, without an adequate "defense/defense" the most likely outcome is fore-knowned! Points are scored mostly due to poor defensive abilities!
Almost any mostly agressive fencer will usually fall into the defensive trap of the better defensive swordsman!
Remember a "touch" or "touche'", is all that is required to make a "point"! LOL
At least that is my humble opinion.
