Well you didn’t give much choice to the mongols :)

If they stay the whey you descrybed they will lose, thay cannot use the mobility and speed of thay’r horse archers and light cavalry.

 

BUT if thay would use theyr heavy cavalry to punch a hole in the line of the knights(you sad that the 350 gothic knights are deployed at the mongols flanks and rear) so it would be aprox 116 knights at one part (if the trap has a squer shape) against 250 mongol heavy cavalry...  If thay desorganising the line of the knights( or literally break it ) than the light cavalry and archers can escape, and that would be very bat for the Gots, as you described they have no light units to catch the fast mongol units ( except the 150 mounted longbow man but 150 vs 1000 is not a question)

 

In conclusion if the mongols fail to escape the trap they are don for, but if they are able to break trout the knights they can use theyr superior mobility to slowly destroy the gothic forces.

You forgot the crossbowmen, and longbowmen can fire twenty rounds a minute, also the knights have already charged the mongols and the trap is more like a triangle, and they they have also been attacked by foot troops, along with dismounted missle troops

Very unlikely... the mongols have 500 light cavalry, ideal for scouting the arreas around the camp and detecting any incoming hostile force. 

BUT if you incist, the procedure vould be very similar to the above described, if the trap is triangularli shaped that vould be 175 gothic knights against 250 mongol heavy cavalry and 500 light cavalry, the mongol light cavalry man all had lassos so thay vould be equalli dangeres to the knights as the heavy cavalry....
 
lets say the initial rain of arrows kills 1/3 of the mongols so its aprox 175 heavy and aprox 340 light cavalry vith lassos against 175 gothic knights, The Knights have better equipment overall but the light cavalry vith the lassos could make series "damage"...
 
if the mongols escape the trap the goths are don for mongols are faster, and the mongol bow had a range aprox 500 meter, vheres long bows and crossbows of that time have max range 250 meter
 
I think if the mongols didnt have the lasso the gots chance to win vould be 80%+
 
but vith lassos the mongols are more likeli to escape and win.

How exactly would a lasso do you any good in a tight formation? Also a destrier is very fast, the light wont be any good packed that tightly, your forgetting the longbows massive rate of fire, also even the mongols can get out (while going uphill) they will have been so badly mauled they will only be thinking of retreating and the knights have martial arts, full plate and they are doing they're best to kill the khan.

Well on second tought it seams you are right! Gothic plate is one of the best plate armors( if not the best :) ) plus if the knights are using theyr crossbows, that vould be 800 ranged units( who are better protected ) against the 500 mongol horse archer. Being so close, the greater range of the mongol bow will not be mutch help... plus the rate of fire of the longbowman vould have a devastating efect... ( alltought all this is so becous of the close range)
 
So finaly: chance for gothic victory 90+%
