I've eaten freshly cooked stingray on a family vacation trip in Thailand ( 1970's ).

Jams, I had a look into it and apparently it's a 'Freshwater Whipray'. Turns out it can even be found in Northern Aus...which is an interesting prospect. http://en.wikipedia.org/wiki/Freshwater_whiprayRegards, - Knights -

The most impressive freshwater fish are still the giant catfish methinks. They look rather more epic somehow. Ever seen the big plaice (plural?) that have been caught at sea?

Dolphin, do you mean exactly "Plaice"? The red spotted flatfish?
There are much bigger flatfish than plaice, and the biggest is the Halibut, they can be huge:

There are some really impressive freshwater fishes in the world:
One is the big European catfish (Silurus glanis):
Also the Siamese catfish, Pla Bleuk (Pangasianodon gigas) is rather impressive:
The Arapaima (Arapaima gigas) from the Amazon region is also really big:
An impressive cyprinid is the Siamese giant carp (Catlocarpio siamensis) from Thailand:
