I would conjure up a holographic Barney then I would take a lightsaber a cut barney in half then I would take a phaser and shoot barney in the head... The list goes on and on
 
Then I would jump out of a plane (since you can't die in the holodeck)
 
Then I would conjure an army of Master Yodas commanded by the Terminator and using my Charisma I would convert them to Belisariusism and they would take over the World

Use Data to help me write personality profiles of famous historical figures, bring them to life and debate away; allowing for the possibility of escalation into fistfights.  I'd also create a workout program like the one warf uses; only having historical characters (generally ones I do not care for) as the targets.

Best idea so far.

Personally, I would holodeckisize myself to China for a day, then holodeckisize myself into as many places as I could get into without getting caught, and steal like there's no tomorrow! (Then I would make money out of the patent, but not until I'd had my fun).

I don't think you can do that... from what I understand it only simulates, you would need that teleporting technology for that stealing part ;)
